Delectable Vegan dish ,stuffed tomatoes in Tangy creamy sauce thickened cooked with some milk and a spoon of the filling mash.The filling being Methi matar/green peas paneer mash.All without onion garlic.
Yummilicious.
Keep ingredients of Methi matar paneer ready
Keep paneer pieces cut ready
Heat 1tblspn oil in pressure cooker
add cummin ginger paste,tomato puree
Add haldi,1tspn red chilli powder salt to taste stir
add Methi leaves,green peas /matar 8-10 pieces,paneer
Cook with a little water in pressure 3whistles
Churn coarse with hand blender
Add 1/2 cup milk blend well into coarse mix
The Methi matar paneer is ready
For stuffed tomatoes :
scope out the pulp of 3-4 tomatoes
Now keep the hollow tomatoes in fridge while making gravy
For gravy
Heat butter/oil and add the pulp of tomatoes blended
Add the dry spices and salt to taste,saute well
Add 1/2cup milk stir well simmering
Now add 1tspn of the methi matar paneer mash
Add 1tblspn tomato sauce mix well
The gravy is cooked now
Stuff the hollow tomatoes taken out of fridge
Pour gravy in a glass baking dish
Place stuffed tomatoes on this gravy
keep in micro oven to cook for 2minutes
Take out if tomato skin turned soft ,else 1 minute more
The stuffed tomatoes are done
served hot with garnish of fresh cream
