ABOUT Vegan Creamy Tomato Stuffed RECIPE

Delectable Vegan dish ,stuffed tomatoes in Tangy creamy sauce thickened cooked with some milk and a spoon of the filling mash.The filling being Methi matar/green peas paneer mash.All without onion garlic.

Ingredients Serving: 2

  1. 3 -4 Tomatoes
  2. For Matar methi paneer mash
  3. 50 grams paneer
  4. 1 cup green peas
  5. 1 cup methi leaves
  6. 1 tspn ginger paste
  7. 1 tomato fine cut
  8. 1/2cup milk
  9. Salt to taste
  10. 1/2tspn cummin paste
  11. Pinch of haldi
  12. 1 tspn red chilli powder
  13. 1tblspn oil
  14. For gravy
  15. 1tspn ginger garlic paste
  16. 1 tomato pureed
  17. 1 tblspn tomato ketchup
  18. Salt to taste
  19. 1tspn red chilli powder
  20. 1/2 tspn pepper
  21. 1/tspn corriander powder
  22. 1/2 cup Milk
  23. 1tspn of methi matar paneer mash
  24. 1tblspn butter/oil/ghee as preferred
  25. Some fresh cream to garnish

Instructions

  1. Keep ingredients of Methi matar paneer ready
  2. Keep paneer pieces cut ready
  3. Heat 1tblspn oil in pressure cooker
  4. add cummin ginger paste,tomato puree
  5. Add haldi,1tspn red chilli powder salt to taste stir
  6. add Methi leaves,green peas /matar 8-10 pieces,paneer
  7. Cook with a little water in pressure 3whistles
  8. Churn coarse with hand blender
  9. Add 1/2 cup milk blend well into coarse mix
  10. The Methi matar paneer is ready
  11. For stuffed tomatoes :
  12. scope out the pulp of 3-4 tomatoes
  13. Now keep the hollow tomatoes in fridge while making gravy
  14. For gravy
  15. Heat butter/oil and add the pulp of tomatoes blended
  16. Add the dry spices and salt to taste,saute well
  17. Add 1/2cup milk stir well simmering
  18. Now add 1tspn of the methi matar paneer mash
  19. Add 1tblspn tomato sauce mix well
  20. The gravy is cooked now
  21. Stuff the hollow tomatoes taken out of fridge
  22. Pour gravy in a glass baking dish
  23. Place stuffed tomatoes on this gravy
  24. keep in micro oven to cook for 2minutes
  25. Take out if tomato skin turned soft ,else 1 minute more
  26. The stuffed tomatoes are done
  27. served hot with garnish of fresh cream
