Ingredients Serving: 4

  1. Mutton with bones 1/2 kilogram
  2. Sesame oil 1/4 cup
  3. Dried red chillies long ( spicy ones ) 12
  4. Hot water 1 cup
  5. Garlic fat cloves 10
  6. Ginger 1 inch plus 1/2 inch
  7. Black whole pepper 1 teaspoon
  8. Cloves 5
  9. Bay leaves 2
  10. Cinnamon stick medium 1
  11. Red Onion big sized 2 roughly chopped
  12. Shallots 10
  13. Red Tomato big sized 1
  14. Turmeric powder 1.5 teaspoons
  15. Coriander powder 1/4 teaspoon
  16. Salt 2 teaspoons or as required
  17. Tamarind medium lemon sized ball
  18. Water 2 glasses or as required
  19. Curry leaves 3 sprigs

Instructions

  1. Firstly , soak red chillies in a cup of hot water . Cover and rest for 20 minutes .
  2. Meantime , arrange all the other ingredients . Grind shallots , red onions , ginger and garlic cloves into a slight coarse paste with very little water . Keep it aside .
  3. Heat 1/4 cup sesame oil in a heavy based wok .
  4. Add bay leaves , cloves and cinnamon stick.
  5. Fry till aroma released without burning them . Maintain low heat .
  6. Pour the ground onions ginger garlic paste to the hot oil .
  7. Sauté quickly for 3 minutes until aroma spreads .
  8. Add the cleaner , drained mutton pieces . In high flame , fry mutton along with the onion ginger garlic sautéed mixture until mutton turns colour .
  9. Keep stirring in regular intervals to avoid the contents getting burnt .
  10. Once mutton has turned colour, reduce the flame to medium .
  11. Add turmeric powder .
  12. Add 1/2 glass water .
  13. Add 1/2 the salt .
  14. Cover the pot and cook the mutton until mutton tenderises for 30 minutes .
  15. Do check, stir in between occasionally .
  16. If water required , adjust accordingly . Don’t add much water initially .
  17. Meantime , soaked red chillies are soft .
  18. Grind red chillies , tomato and black whole pepper into a smooth paste .
  19. When the meat is cooked , add the red chilli tomato paste .
  20. Add only 1/4 teaspoon coriander powder.
  21. Add another glass water . Cover and cook for 5 minutes until gravy looks red and oil floats on top .
  22. Pour in the thick tamarind extract .
  23. Add the remaining salt . Mix .
  24. Add the curry leaves .
  25. Allow the curry to boil in open for 5 to 7 minutes in medium heat or until preferred consistency .
  26. Spicy Red Chilli Mutton Curry is ready .
  27. Serve hot with rice / rotis / dosas / idlis .
