ABOUT lamb mince stuffed tomatoes RECIPE

Juicy tomatoes filled with flavour filled minced lamb, makes a perfect platter if served with spiced rice and garlic bread

Ingredients Serving: 4

  1. 4 good quality red and firm tomato
  2. 1 pinch sugar
  3. 4 table spoon extra virgin olive oil
  4. 1 onion finely chopped
  5. 2 garlic cloves finely chopped
  6. 300 grams minced lamb
  7. 1/2 teaspoon ground cinnamon
  8. 1/2 teaspoon chilli flakes
  9. 250 ml chicken stock
  10. 2 tablespoon parsley
  11. 1 teaspoon Lemon juice
  12. Salt to taste
  13. Cheese to Sprinkle on top(optional)

Instructions

  1. slice the top of the tomatoes and reserve, scoop out most of the pulp with a teaspoon carefully.
  2. Finely chop the pulp and keep aside.
  3. heat up the oven at 180 degrees celsius.
  4. Sprinkle some sugar inside the tomatoes, this will reduce the acidity of the tomatoes.
  5. in a pan heat up 3 tablespoon of olive oil, add garlic and onion
  6. gently cook for about 10 minutes until soft but not browned.
  7. Add lamb, tomato Pulp and cinnamon powder, cook on high flame for 5 minutes.
  8. Reduce the heat, add chicken stock and salt and let it simmer until meat is browned, add chili flakes.
  9. add lemon juice and chopped parsley
  10. fill the tomatoes with this mixture well. Add some grated cheese. Cover with tomato tops.
  11. Place them on baking tray
  12. Drizzle remaining olive oil
  13. Sprinkle 2-3 tbsp water on baking tray and bake for 30 minutes
  14. Garnish with fresh parsley. Serve hot or cold with spiced rice and garlic bread
