ABOUT Lamb and cheese Manakeesh RECIPE

Manakeesh or Manakish is a middle eastern flatbread. This one is made with a simple yeasted dough , and topped with Tangier spice blend ,minced lamb and some cheese. This arabic version of pizza is delicious and filling !

Ingredients Serving: 4

  1. For the manakeesh dough :
  2. 1 cup all purpose flour or maida
  3. 1/2 teaspoon salt
  4. 1/2 tablespoon olive oil
  5. 1 teaspoon active dried or instant yeast
  6. 1/4 cup water
  7. Pinch of sugar
  8. For the lamb mince :
  9. 150 grams lamb kheema or mince
  10. 1 medium onion, finely chopped
  11. 1 medium tomato , finely chopped
  12. 1 tablespoon finely chopped coriander
  13. 1/4 teaspoon turmeric
  14. 1/2 teaspoon salt or to taste
  15. For the toppings :
  16. 1 1/2 tablespoon olive oil
  17. 1 1/2 tablespoon Tangier spice blend
  18. 1/4 cup mozzarella cheese

Instructions

  1. To make the dough : heat the water until lukewarm . Add the sugar and yeast and let rest for 5 to 10 minutes
  2. Once the yeast is frothy, you can continue. If it doesn't turn frothy , discard and start over.
  3. Add the flour, oil and salt to the yeast mixture
  4. Mix by hand until it comes together into a rough dough. If it's too wet , add more flour . If too dry, add more water by the tablespoon
  5. Knead for 5 minutes or so until smooth and not sticky. Place in a greased bowl , cover and let rest in a warm place for an hour or until doubled
  6. As the dough rests, you can prepare the minced meat. In a frying pan , saute the onion until golden brown. Add tomato and cook until oil separates. Add the coriander , mince , salt and turmeric . Cook for few minutes until done.
  7. Once the dough has doubled , punch out the air . Preheat the oven to 180 c or 350 F.
  8. Divide the dough into 4 portions and roll each into a circle of about 5 inches . Place the circles on a baking sheet .
  9. Mix together the olive oil and Tangier spice blend. Apply over all the bases leaving a thin edge of about an inch free.
  10. Apply the minced meat filling over the Tangier spice layer on all the bases.
  11. Grate the mozzarella cheese over the minced meat (about a tablespoon over each )
  12. Bake for 15 to 18 minutes . Serve hot or warm !
