Manakeesh or Manakish is a middle eastern flatbread. This one is made with a simple yeasted dough , and topped with Tangier spice blend ,minced lamb and some cheese. This arabic version of pizza is delicious and filling !

Ingredients Serving: 4
For the manakeesh dough :
1 cup all purpose flour or maida
1/2 teaspoon salt
1/2 tablespoon olive oil
1 teaspoon active dried or instant yeast
1/4 cup water
Pinch of sugar
For the lamb mince :
150 grams lamb kheema or mince
1 medium onion, finely chopped
1 medium tomato , finely chopped
1 tablespoon finely chopped coriander
1/4 teaspoon turmeric
1/2 teaspoon salt or to taste
For the toppings :
1 1/2 tablespoon olive oil
1 1/2 tablespoon Tangier spice blend
1/4 cup mozzarella cheese
Instructions
To make the dough : heat the water until lukewarm . Add the sugar and yeast and let rest for 5 to 10 minutes
Once the yeast is frothy, you can continue. If it doesn't turn frothy , discard and start over.
Add the flour, oil and salt to the yeast mixture
Mix by hand until it comes together into a rough dough. If it's too wet , add more flour . If too dry, add more water by the tablespoon
Knead for 5 minutes or so until smooth and not sticky. Place in a greased bowl , cover and let rest in a warm place for an hour or until doubled
As the dough rests, you can prepare the minced meat. In a frying pan , saute the onion until golden brown. Add tomato and cook until oil separates. Add the coriander , mince , salt and turmeric . Cook for few minutes until done.
Once the dough has doubled , punch out the air . Preheat the oven to 180 c or 350 F.
Divide the dough into 4 portions and roll each into a circle of about 5 inches . Place the circles on a baking sheet .
Mix together the olive oil and Tangier spice blend. Apply over all the bases leaving a thin edge of about an inch free.
Apply the minced meat filling over the Tangier spice layer on all the bases.
Grate the mozzarella cheese over the minced meat (about a tablespoon over each )
Bake for 15 to 18 minutes . Serve hot or warm !
