ABOUT Zaatar Cheese Manakeesh RECIPE

Zaatar Cheese Manakeesh (also known as manaqish and manakish; singular manousheh) is a common traditional breakfast in the Middle Eastern countries . This breakfast is enjoyed by the native people and expatriates. Basically it is a flatbread with dry zaatar mix and olive oil topping. There are various options for the topping such as labneh or spinach. It is very easy to make except for the rising time needed. Zaatar is a mix of thyme, sesame and sumac powder(red berry powder having a subtle lemony flavour) which is mixed with olive oil and spread on the Manakeesh.

Ingredients Serving: 5

  1. Refined flour (maida) 350 gram or 2 & 1/2 cups
  2. Active Dry yeast 1 teaspoon
  3. sugar 1 teaspoon
  4. Salt 1 teaspoon
  5. Warm water 250 ml
  6. Extra virgin Olive oil 1 tablespoon
  7. More maida for dusting
  8. ZAATAR MIX
  9. Dried thyme 2 teaspoon
  10. Ground sumac 1 teaspoon
  11. Toasted sesame seeds 1 tablespoon
  12. Olive oil 4-5 tablespoons
  13. Use ready Zaatar mix if available 40 grams
  14. Cheese
  15. Grated Akkawi cheese around 1 cup ( if not available use cheddar or mozzarella cheese whichever is available locally)

Instructions

  1. In a bowl combine yeast, sugar and lukewarm water. Cover and keep aside for 10 minutes.
  2. In a wide bowl take refined flour, salt and oil.
  3. After 10 minutes add the yeast mixture to the flour mixture and mix to form a dough.
  4. Turn out the dough onto a floured surface and knead for 5 minutes until the dough is elastic and smooth.
  5. Place the dough in a greased bowl and cover with a damp cloth or cling/wrap film Leave it for 1 and 1/2 hour until dough doubles in size.
  6. When the dough has doubled, take it on a work surface and punch down to remove the air.
  7. Divide the dough into equal parts and shape into balls.
  8. Again cover these balls for 20 to 30 minutes for a second rise.
  9. On a floured surface flatten each ball with a rolling pin to approximately 6" diameter discs.
  10. Place them on a baking tray.
  11. Preheat oven to 220 degrees Celsius
  12. Combine the zaatar and olive oil to make the topping.
  13. Spread zaatar-oil mix on one half and cheese on the other half of each flatbread disc leaving 1/2" border.
  14. Bake in preheated oven for 10 to 12 minutes until golden.
  15. Serve hot.(Yields about 10 manakeesh)
