Ingredients Serving: 5

  1. Atta/Wheat flour : 1 cup
  2. Suji : 1/2 cup
  3. Sour curd : 1 cup
  4. Salt to taste
  5. Jeera powder : 1/2 tsp
  6. Red chilli powder to taste
  7. Eno : 1 small pkt
  8. Whey (left over water from paneer) as required
  9. For tadka :
  10. Mustard oil : 3 tbsp
  11. Mustard seeds : 1 tsp
  12. Cumin seeds : 1/2 tsp
  13. Onions : 1 chopped
  14. Green chillies : 2 crushed (optional)

Instructions

  1. In a big bowl add atta, suji, salt, red chilli powder, jeera powder and mix well.
  2. Now add curd and mix well.
  3. Now add whey and adjust the consistency of the batter, it should be smooth thick but not too thick, like the batter for idlis or dhokla.
  4. For tadka :
  5. Heat oil in a pan add cumin seeds and mustard seeds and let it sizzle for a min.,now add green chillies and onion and fry till golden. Switch off the gas.
  6. Mix this tadka in batter, keep it aside covered for 1/2 hr.
  7. After 1/2 hr mix it again and add eno and mix well.
  8. Heat appam pan, pour a drop of oil in all the appam holes and pour batter with a spoon in appam pan, let it cook on slow. It will puff a little now turn its side using toothpick or handle of the spoon. Again cook on slow flame after few mins, turn the flame on high keep a watch so that it should not get burnt. Cook till done.
  9. Serve hot.
  10. Eat it with sambhar or ketchup or curd.
