ABOUT Fettucine aglio e olio RECIPE

Fettucine aglio e olio means fettucine with garlic and oil..Now here i have chosen a flat thick ribbon pasta which is essentially made of eggs and flour.I have brought market purchased fettucine and made Italian pasta..You can enjoy this meal in your lunch or dinner.Truly aromatic with sauted garlic , infused in yogurt sauce , its surely going to tickle your gustatory receptors.

Ingredients Serving: 4

  1. Fettucine pasta 250g
  2. 2 tablespoon olive oil
  3. 30g chopped mint
  4. 2 tablespoon greek yogurt
  5. Pink onions 1 medium sized
  6. Cherry tomatoes 5-6
  7. Bellpeppers chopped 1 small (any colour)
  8. 1teaspoon freshly ground pepper
  9. 1 tbsp flakes of red paprika
  10. Salt as per taste
  11. Button mushrooms 2 chopped
  12. Parmesan cheese 20g
  13. Garlic flakes (10-15)

Instructions

  1. Bring large pot of salted water to boil.
  2. Drop the fettucine pasta and few drops of olive oil to avoid adhering of pasta during boiling .
  3. Cook for 10 minutes .. Once they are tender , drain under cold water in a colander.
  4. Now in a wok , add olive oil on a medium flame.
  5. Add onions and saute them but do not caramalise.
  6. Saute 10 grated flakes of garlic now.
  7. Add all chopped veggies , and chopped mushrooms too .
  8. Add salt , pepper red paprika flakes .
  9. Allow the veggies to become semi soft..we dont have to make very soft like veggy..
  10. Add fettucine pasta , along with the greek yogurt..
  11. Toss to blend .
  12. Your delicious italian fettucine aglio e olio pasta is ready
  13. Sprinkle parmesan cheese over it .(optional, as it is a Non vegetarian cheese )
  14. Garnish with basil leaves or mint leaves.
  15. Enjoy this Italian meal at home.
