homemade semolina ravioli with pesto sauce gives you restaurant style taste

Ingredients Serving: 4
semolina flour 200gm
water 85ml
olive oil 15 ml
pinch of salt
for pesto sauce
basil handful
7-8 garlic pods
1 cup olive oil
half cup cashew nuts
1/4 th cup cheese
pepper to taste
salt to taste
for ravioli filling
broccoli handful finely chopped
some grated cottage cheese
cumin powder
thyme and oregano
Instructions
first take a large bowl mix semolina flour salt and oil bind it with water
wrap in cling wrap and keep aside for 20 mins
after 20 mins take a ball of dough and flatten it with rolling pin and do it several times until thin smooth base forms and then cut it into shapes u want. u can also do it with pasta machine if you have it will make your work easier
now for pesto sauce take a bowl add basil leaves (if u don’t have fresh basil leaves dry basil will also do but it taste different than what fresh tastes) cashew nuts garlic pods cheese salt and pepper and olive oil and toss it well
now add all in food processor and mix it well until a sauce like consistency is achieved
now take bowl add water and salt and bring it to boil and now add pasta into it until it floats. remove it all
now take two pasta sheet and add filling into it filling of broccoli and cottage cheese u can add some processed cheese if u want add some spices like salt cumin oregano thyme
now take a non stick pan add butter or olive oil add pesto sauce and add ravioli into it let it cook and serve hot
