Home made stuffed ravioli served with Bolognese sauce.

Ingredients Serving: 4
For the ravioli :
Maida - 2 cups
Semolina - 2 tbsp
Eggs - 3
Olive oil - 2 tbsp
Salt
Mince mixture :
Minced chicken - 200 gm
Chopped onion - 1
Chopped tomatoes - 1
Ginger Garlic Paste - 1 tsp
Oregano Basil/thyme 1 tsp
Cayenne pepper 1 tsp
Salt
Olive oil 1tbsp
Cheese 1/4 cup
Bolognese sauce :
Chopped onion - 1
Chopped tomatoes -2
Salt
Thyme/rosemary - 1/2 tsp
Chilly flakes - 1/2 tsp
Cayenne pepper - 1 tsp
Chopped garlic - 2 tsp
Red wine (I did not have so I have added water)
Olive oil
Parmesan cheese 2 tbsp
Instructions
Mix all the ingredients to form a soft dough. Use water if required.
Rest it for 20 minutes and then roll out using some maida to dust. I have used the Indian belan (rolling pin) to roll out the dough as thin as possible and cut out the shapes using cookie cutter as I do not have a pasta maker.
Now take one of the rolled pasta, put some mince mixture, put the other rolled pasta on it and press the sides to seal it.
Heat some oil in a kadhai, and add the chopped onions. Fry till golden brown and then add the ginger garlic paste.
Saute for sometime and then add the chicken mince and all the spices and salt.
Add the tomatoes and cook till done and dry .
Cool it and mix the cheese and form small balls to stuff the ravioli.
Heat a pan, add some oil and then add the chopped garlic. Once they start giving off an aroma, add the onions and fry till translucent.
Then add the tomatoes and spices, salt and cook till they are mushy.
Add red wine to make the gravy. I did not have it so I added water.
1Meanwhile, boil water and cook the stuffed ravioli in it for 4-5 minutes. Strain them and add them to the sauce above.
Toss for few minutes and serve with cheese on top.
