ABOUT Chak-Hao Kheer / Black Rice Kheer RECIPE

Chak-Hao kheer is a traditional recipe from the Indian State of Manipur. Manipur produces a large scale of black rice and this black rice kheer is one of the most popular dish not only within the state but amongst the neighbouring states and many parts of India. Black Rice Kheer is one of the healthiest dessert. The reason being black rice also known as forbidden rice or purple rice has immense nutritional and health benefits. Some of which are – rich in antioxidants, natural dexotifier, good source of fiber, preventing risk of diabetes, preventing risk of obesity, richer protein content and better heart health. Black rice has a very unique flavour and Nutty in taste and texture. Here i have soaked the rice for 3-4 hours as black rice takes longer time to get cooked. You can pressure cook the rice without soaking if you are in short of time. Also the dry fruits and nuts can be ghee roasted and serve with the kheer.

Ingredients Serving: 4

  1. 1 cup black rice
  2. 1 litre milk
  3. ½ cup sugar
  4. 2 pods Cardamom / 1/4 tsp powder
  5. 2-3 tbsp Pistachios, Almond and Raisin for serving 

Instructions

  1. Wash the black rice 3-4 times in water and soak them in water for atleast 3-4 hours or overnight. 
  2. In a thick bottom pan or pot pour the milk and bring it to a boil. 
  3. Add the soaked rice and continue to cook on a low-medium heat stirring it frequently to avoid sticking the rice at the bottom. 
  4. When the milk starts to thickens add the sugar and cardomon and cook till the rice is cooked and the kheer becomes creamy. Remove from heat and discard the cardamom pods. 
  5. Pour the kheer in serving dish, garnish with Raisins, sliced almond and pistachios and serve warm or chilled.
