Ingredients Serving: 4

1 litre full cream milk
3/4 cup sugar or to taste
2 tbsp ghee
2 tbsp curd
1 tbsp semolina
1 tbsp edible gum
1/2 tsp green cardamom powder (optional)
chopped almonds for garnishing

Instructions

boil the milk in a kadai on high flame
as milk starts to boil, reduce the flame and continue simmering for 25-30 minutes
keep stirring in every 5-10 minutes
in another pan, heat 1 tbsp ghee and fry edible gum until it puffs up
in the same pan, fry semolina until it turns brown in colour
add both the fried ingrediants to the milk and continue to simmer for another 5 minutes
add curd to milk and turn off the flame, mix well
in a pan, heat 1 tbsp ghee and add sugar, allow it to melt completely
add the melted sugar to the milk
place the curdled milk back on flame and allow the milk to simmer further, stirring continuously
after 15-20 minutes, liquid gets dried up and kunda is ready
add cardamom powder (optional)
allow it to cool down to room tempreture
garnish with almonds and serve
