Measure all the ingredients as per the recipe.
Crush the sugar to fine powdered.
Keep the yeast for fermentation by adding Luke warm water and a pinch of salt.
Sieve the flour, gluten, bread improver and make a bay at the center.
Sprinkle salt and sugar at the edges and hide it by mixing with hands.
Add the fermented yeast into the bay and mix well by adding 70% of water.
Keep kneading for gluten formation and add the fats and knead.
Keep it for bulk fermentation by covering it with a clean wrap.
Once fermented, apply knock back and do the scaling by dividing dough balls of 40gram each.
Roll each balls into perfect circle.
Allow it to rest for pan proofing.
Once proofed, spray water and then allow it to bake
Bake at 220 degree celcius for 15 minutes.
Once baked, cool it and then serve.
