Ingredients Serving: 4

  1. 1 cup urad dal (skinless split black gram lentils )
  2. 1 green chilli finely chopped
  3. 20-25 raisins
  4. Oil for frying
  5. 3 cups plain yogurt
  6. 1 tsp Roasted Cumin Powder
  7. 1 tsp red chilli powder
  8. salt as per taste
  9. For garnishing :
  10. 1 cup green coriander chutney
  11. 1 cup tamarind chutney
  12. 1 tsp red chilly powder
  13. 1 tsp Roasted Cumin Powder
  14. 1 tbsp chat masala
  15. 1/4 cup Thin aloo sev (optional )

Instructions

  1. Soak the urad dal for atleast 4 hours or overnight.
  2. Drain the soaked dal and grind it to a smooth batter with no or very little water if required.
  3. Add green chillies, salt and raisins into the batter. Stir and mix well using spatula or whisk for 5-10 minutes to make the batter aerated, light and fluffy.
  4. Heat sufficient oil in a pan. The temperature of the oil should neither be too hot nor too cold. If you drop a little batter into the oil, it should rise to the top . This is the correct temperature of the oil.
  5. Wet your palm and drop tablespoons of batter into the oil such that each dollop of the batter contains a raisin.
  6. Deep fry on low medium heat till the vadas turn crispy and light golden color. Take it out on a kitchen paper towel or any absorbent material to drain out excess oil.
  7. Meanwhile take sufficient lukewarm water in a container enough to soak the fried vadas. Soak the fried vadas in the lukewarm water for 10 -15minutes.
  8. In the meantime, prepare the yogurt. Whisk the yogurt in a bowl till it becomes smooth and creamy. Add 1 tsp red chilly powder, roasted cumin powder and salt .
  9. Take out the vadas and press it lightly between the palms to drain out excess water. Place the vadas in a bowl. Add yogurt so that it covers all the vadas. Leave it soaked for 30 minutes. The vadas will absorb the yogurt. Drizzle green chutney and tamarind chutney over the dahi vadas. Sprinkle chilli powder, roasted cumin powder, chat masala and add some thin aloo sev.
  10. Serve the dahi Vadas immediately or refrigerate it till ready to be served.
