Ingredients Serving: 4

  1. bottle gourd - 1 large size
  2. salt to taste + 1 tsp
  3. red chili powder - 2 tsp
  4. cinnamon - 1 piece
  5. cloves - 2
  6. bay leaf - 1/2 piece
  7. green cardamom powder - 1 tsp
  8. chopped onion - 2 tbsp
  9. chopped green chili - 1 tbsp
  10. roasted gram flour - 2 tbsp
  11. garam masala - 1/2 tsp
  12. lemon juice - 1 tbsp
  13. oil for frying
  14. cumin - 1 tsp
  15. ghee - 1 tbsp
  16. tomato slices for garnishing

Instructions

  1. Peel, wash and grate the bottle guard, boil in water with 1 tsp salt, bay leaf, clove and cinnamon.
  2. Cool it and remove the whole spices then squeeze the excess water and mash well.
  3. Heat the ghee in a pan, add cumin and let it crackle. Saute the ginger, green chili, add grated bottle gourd. Cook for 5 minutes, turn off the flame.
  4. Mix salt, red chili, garam masala, cardamom powder, coriander, lemon juice and roasted gram flour.
  5. Cool the mixture. Make the kebabs and shallow fry them till golden and crisp.
  6. Garnish with tomato slices and serve hot.
