Ingredients Serving: 4

  1. For Rice
  2. 1 cup basmati rice
  3. 1/2 teaspoon turmeric
  4. Salt to taste
  5. 1/2 teaspoon oil
  6. 4 cup water
  7. For Masala
  8. 2 teaspoon pav bhaji masala
  9. 1/4 cup peas
  10. 2 teaspoon red chilli paste
  11. 1 tbsp butter
  12. 1/2 capsicum finely chopped
  13. 1/2 onion finely chopped
  14. 1 tomato chopped
  15. 1 boiled potato cubed
  16. 3 tbsp chopped coriander leaves
  17. 1 tbsp lemon juice
  18. 1 teaspoon ginger garlic paste
  19. Salt to taste
  20. 3 tbsp water

Instructions

  1. wash and cook the rice over medium heat without lid add oil salt and turmeric powder cook until almost done
  2. drain excess water and allow the rice to come to room temperature
  3. in a large Pan melt butter and add onions stir fry until onions are translucent
  4. add ginger garlic paste and stir fry until raw Aroma goes away
  5. are tomatoes and cook until tender
  6. add green peas and mix well
  7. using potato masher mash the vegetables well
  8. add lightly mashed potatoes and mix well
  9. Add capsicum and saute for 2 minutes.capsicum should retain the crunchy taste
  10. Add red chilli paste, salt, water and pav bhaji masala. Cook for 4-5 minutes
  11. Add lemon juice and mix
  12. Add cooked rice and gently mix without breaking grains
  13. Garnish with fresh chopped coriander leaves. Serve hot with raita
