ABOUT Ol bata(yum or suran paste) RECIPE

Foot yum or yum or suran paste with coconut and mustard seeds paste- a recipe from Bengal .

Ingredients Serving: 4

  1. Yum or suran roughly 150g
  2. Fresh Coconut paste 3/4 cup
  3. Black mustard paste with 2-3 green cilli 2 table spoon
  4. Lemon juice 1 and 1/2 table spoon
  5. sugar 1 teaspoon
  6. Salt as required
  7. Mustard oil 1 and 1/2 table spoon
  8. Roasted nigella seeds 1 teaspoon (optional)

Instructions

  1. Wash the yum thoroughly with warm water and cut into small pieces or grate it.
  2. Make a paste of it
  3. In a mixing bowl take yum paste add fresh coconut paste, salt, sugar ,Mustard- cilli paste, lemon juice
  4. Mix properly and add mustard oil
  5. Mix again and mix roasted nigella seeds
  6. Serve with hot steamed rice

You do not add black mustard seeds to this recipe.It is yellow mustard seeds that you add to this recipe.Also, nigella seeds a strict no no.Blacks mustard seeds will destroy the flavorful of ol completely, instead of enhancing it,to the extent that the recipe might turn bitter.
