Ingredients Serving: 4

  1. 2 medium sized fresh coconuts
  2. 200 grams mawa
  3. 2 cups sugar
  4. 2 cups Milk
  5. 1 cup rose syrup
  6. 1 cup fresh cream
  7. Dryfruits....optional

Instructions

  1. Grate fresh coconut.

  3. Pressure cook grated coconut by adding milk to it for 2 whistles on medium flame .
  4. Do not remove excess air from the pressure cooker, let the pressure go off slowly on its own .
  5. Now remove boiled coconut into a deep nonstick pan.
  6. Add sugar to it and cook until sugar dissolves completely.
  7. Coconut should be little less sweet at this stage as adding rose syrup later will also add the sweetness to this dish.
  8. Then add mawa and mix gently with light hands.
  9. Cook until coconut starts leaving the pan
  10. Then add fresh cream and give a quick mix to it .
  11. Regular Coconut barfi is ready at this stage but since we have to give it a tiswt...We add one more step to our recipe
  12. Lastly add rose syrup and again mix gently using cut and fold method.
  13. Coconut will turn light pink at this stage
  14. And our Coconut Barfi with a rose twist is ready
  15. Remove the mixture into a square or rectangular glass dish to set if you want to serve it as pieces
  16. OR, remove it into a bowl or plate if you want to serve it as we serve regular halwa of any type
  17. Finally cut the mixture into small pieces and garnish with grated coconut and rose petals, or as you like .
  18. Adding dryfruits is optional as per your choice .
