Ingredients Serving: 4

  1. 225g all purpose flour
  2. 40g grounded coconut
  3. 185ml coconut milk
  4. 185ml milk
  5. 1 tablespoons caster sugar
  6. 2 Mango Puree
  7. 2 egg lightly whisked
  8. Melted butter, for brush
  9. Whipped cream
  10. Melted chocolate
  11. Some shredded chocolate

Instructions

  1. Combine flour and coconut in a large bowl.
  2. Whisk egg, coconut milk, mango puree, milk and sugar .
  3. Stir into flour mixture. Set aside for 30 mins to rest.
  4. Heat a medium non-stick frying pan over medium-low heat.
  5. Lightly brush with melted butter. Pour 1/4 cup (60ml) batter into the pan.
  6. Cook for 2 mins or until bubbles appear on the surface. Carefully turn and cook for 1 min or until golden.
  7. Stack the pancakes on serving plates.
  8. Whip cream until fluffy and soft peak seem.
  9. Take one pan cake, apply whipped cream evenly on it.
  10. Put second pan cake and repeat the same process until, cakes finished.
  11. Top up with some shredded chocolate and melted chocolate .
