ABOUT Fried Coconut Sambol RECIPE

In Sri Lanka mostly they eat a spicy coconut sambol made with fresh grated coconut, chili and onions. I loved it and I almost always have this sambol in my fridge for a quick meal because I find it pretty versatile. We can also eat it with rice, bread and even between our grilled cheese sandwiches.

Ingredients Serving: 5

  1. Desiccated shredded coconut : 1 cup
  2. 1 : medium onion finely sliced and chopped
  3. Cinnamon stick : 1 (1 inch)
  4. Curry leaves : 12-15
  5. Pandan leaves : 1-2
  6. Olive oil : 2 tbsp
  7. Red chilli powder : 2 Tbsp
  8. Salt to taste
  9. 3/4 cup water as needed

Instructions

  1. Heat oil in large frying pan on med-high heat.  Add curry leaves, onions, pandan leaves, and cinnamon stick and saute until onions begin to brown 
  2. Then lower the heat to medium and add the coconut, salt and red chilli powder and saute in pan with all other ingredients for a minute
  3. Finally, add hot water and stir well until the coconut absorbs all the water and the texture softens from dry to more tender. 
  4. Taste for salt and chili powder.  Turn heat off stove and serve with rice, bread, roti, etc.. Enjoy.
