ABOUT Pol roti & Pol sambol. RECIPE

During our visit to Sri Lanka, one thing I noticed is the taste of the food there. Most of the dishes have some resemblance to kerala dishes. They use too much of coconut. most of the breakfast dishes r the same. Among a few that r new, I liked most is their pol roti & pol sambol. I used to make this for breakfast sometimes. This sambol goes well with any rotis or plain rice. This roti can b made with maida or wheat flour. i used wheat flour.

Ingredients Serving: 2

  1. For the roti.
  2. Wheat flour 1 cup
  3. Coconut 1/2 cup
  4. coconut milk 1/4cup( or just enough to make dough)
  5. onion 1/4 chopped
  6. Green chillies 1 chopped
  7. Salt.
  8. oil enough to make dough & to cook
  9. For sambol
  10. Coconut 1 cup
  11. onion 1/2 finely chopped.
  12. red chilli powder 1 tsp or according to ur taste.
  13. garlic 4 cloves. chopped
  14. Salt
  15. lime juice , according to taste.

Instructions

  1. mix all ingredients one by one & make a smooth dough. Keep it aside for sometime.
  2. mix all ingredients given for sambol either with hands or in blender just for 1 sec. It should b in a powder form.
  3. apply some oil on our hands.& grease a plastic sheet or plate
  4. make balls from the dough. roll it with ur hands on the greased sheet or plate. a little thicker that chapathi.
  5. heat a tawa. cook the roti on both sides well.
  6. apply oil on top & sides.
  7. serve hot rotis with sambol.
