ABOUT Mango entremet RECIPE

Mango is greatest gift of summer and this recipe is divine with different texture of mango. It consist of 3 parts . Base is chocolate sponge middle later is mango mousse n top layer is.mango jelly

Ingredients Serving: 8

  1. For Chocolate Sponge
  2. 70 gms Maida
  3. 50 gms powdered sugar
  4. 1 while egg + one egg yolk
  5. 1/2 tsp baking powder
  6. 1 5bsp cocoa powder
  7. 30 gm oil
  8. For mango mousse
  9. 1 cup mango puree without any lumps
  10. 1 cup whipping cream (non.dairy )
  11. Sugar if required depending upon. the sweetness of mango
  12. 2 tsp agar agar dissolved in hot water
  13. For mango jelly
  14. 1 cup mango juice
  15. 2 tbsp sugar more or less depending upon sweetness of sugar
  16. 1 tsp agar agar dissolved in hot water
  17. Chocolate curls and ting mango flower for garnishing

Instructions

  1. For.chocolate sponge beat sugar and oil.
  2. Then add egg and beat well.
  3. Next sieve Maida,.baking powder and cocoa powder.
  4. Add dry ingredients to wet ingredients and mix well
  5. Bake in a greased spring foam pan of 6 inch in a preheated oven at 170 degree for 20 mis
  6. After it cools down cut the mounted top and level chocolate sponge .
  7. For mousse add agar agar agar to. warm water
  8. Now add sugar to mango puree if required depending upon the sweetness of mango.
  9. Now add agar agar and water mixture to mango puree.
  10. Whip cream and fold mango puree mixture in it gently .
  11. Now pour this mixture over chocolate sponge in spring foam tin
  12. Let it set in fridge overnight or for atleast 6 hrs
  13. Now for mango gel . Heat mango juice in a pan . To this add sugar and mix well.
  14. Next add agar agar to it .let it come to room temperature and pour over mango mousse before it starts setting.
  15. Let it set in fridge for atleast 3 hrs .
  16. Garnish with chocolate curls and tiny mango flower
  17. Serve chilled.
