ABOUT Mambazha Ilai Adai /Mango Plantain Leaf Ada RECIPE

Ela Ada is a famous traditional dish of Kerala. We make the outer covering with rice flour and then make the filling using mango ,coconut and jaggery and stuff this filling inside the rice flour and steam cook.

Ingredients Serving: 4

  1. Mango pieces -1 cup
  2. Grated Jaggery-1 cup
  3. Coconut grated-1/2 cup
  4. Cardomom powder-1/2 teaspoon
  5. Rice flour /Idiyappam flour -1 cup
  6. Water as needed
  7. Salt a pinch
  8. Plantain leaf -1

Instructions

  1. In a bowl add rice flour ,pinch of salt and hot water to make soft chapati like dough.
  2. In a vessel add little water to jaggery and boil for a minute.then strain it to remove impurities.
  3. In a pan add a tablespoon of ghee and fry mango pieces for few minutes.Then add strained jaggery syrup ,cardomom, coconut and stir well until the mixture become thick.Filling is ready.
  4. Now cut the plantain leaf into equal parts and keep them for few seconds in hot tawa so that they become soft.
  5. Grease the plantain leaf with few drops of ghee and take a ball of rice flour dough and spread it into five inch round. Now place a tablespoon of mngo filling in one side.
  6. Fold the leaf such that it is in half moon shape..Seal the edges .Repeat the same for rest of ada .Steam them in idly steamer for about ten minutes and serve.
