Peel and grate(kaddukash) ghiya.
Take a pan, add ghee..heat it and then add the cumin seeds.
As the seeds crackle add ginger. cook for 1 minute and then add onion and saute till it becomes light pink.
Then add all the spices with salt, cook for 1 minute and then add tomato and green chillies.
Cook till the tomato becomes little mushy and then add the grated ghiya and mix well.
Cover and cook for 5 minutes.
After 5 min open and add the kasuri methi by rubbing between the palms, add little water, mix. cover and cook for another 20 min.
Open and serve with roti or paranthas.
