Phirni is delicious punjabi dessert made with milk and grind rice, which is traditionally served in clay bowls. It is similar as rice kheer. Here I made mango phirni.
Rinse the rice and soak them for 30 minutes.
Drain the water and grind them until the consistency granulated not in fine paste.
Soak saffron in to a half cup warm milk. Keep aside.
Heat milk in a heavy bottom deep pan.
Let it come to boil then add ground rice in it.
Cook rice in milk on slow flame.
Keep stirring so that lumps not formed.
Take some boiling water and add almonds in it. Blanch, peel and slice them.
When the rice is almost cooked add saffron milk, Sugar and cardamom powder in it. Stir well.
Let it cool down on room temperature.
Add mango puree and mix well.
Transfer in serving bowl.
Garnish with Chopped almonds.
Refrigerate it. Serve chilled.
