ABOUT Thai Mango Coconut Jelly RECIPE

Ingredients Serving: 6

  1. For Mango Layer:
  2. 2 Mango Puree
  3. 11/4 cup water
  4. 1/3 cup sugar
  5. 2 tbsp agar agar
  6. 1 mango pieces cut
  7. Few mint leaves
  8. For Coconut Layer:
  9. 2/3 cup coconut milk
  10. 2/3 cup water
  11. 4 tbsp sugar
  12. 2 tbsp agar agar
  13. A pinch of salt

Instructions

  1. In a blender puree mango. Soak agar agar in water & keep aside for 10 minutes.
  2. In a pot add agar agar with water & boil till it dissolves. Add sugar & mango puree & whisk till all mixes well Cook for few minutes till smooth.
  3. Remove from heat & pour in mould or glass if you serving individually. Add mango pieces & push them down in the mixture. Keep it aside to set.
  4. For Coconut layer soak agar agar in water for 10 minutes. In a pot add soak agar agar with water.
  5. Boil & stir till dissolves. Add sugar & salt & mix well. Add coconut milk stir & mix all well.
  6. Remove from heat. Pour over set mango layer. Refrigerate & Serve Chilled
