ABOUT lamb rogan josh RECIPE

lamb curry made with Indian spices and yogurt , imparting a beautiful colour with degi mirch but not too spicy for taste.

Ingredients Serving: 3

  1. 500 gm lamb pieces, bone in
  2. 1/2 cup yogurt
  3. 2 tbsp ghee
  4. 1 black cardamom
  5. 2-3 green cardamoms
  6. 3-4 cloves
  7. 1 inch cinnamon stick
  8. 1 bay leaf
  9. 2 onions
  10. 1 tbsp ginger garlic paste
  11. 1/2 tsp turmeric powder
  12. 1/2 tsp coriander powder
  13. 1/2 tsp garam masala powder
  14. 2 tsp degi mirch powder
  15. 2 tbsp water
  16. salt, to taste

Instructions

  1. Heat ghee in a pressure cooker and add all whole spices.
  2. Add chopped onions and sauté till golden brown.
  3. Add ginger garlic paste and sauté till the raw smell goes off.
  4. Add 2 tbsp water to degi mirch powder to make a paste.
  5. Add this paste and other powdered spices and salt .
  6. Put in the lamb pieces and sauté them for couple mins till the pink colour of lamb is gone.
  7. Add the yogurt and mix well.
  8. Add in more water till the lamb pieces are covered .
  9. Pressure cook for 2 whistles and then for 15-20 mins on low flame till the lamb is cooked.
  10. Open the cooker when pressure goes off and garnish with coriander leaves.
  11. Serve hot with roti or rice.
