ABOUT Traditional Lemon Rice RECIPE

Very easy and fast to prepare, tasty and healthy lemon rice recipe. It is best for kids or adults lunch box when you get bored with regular chapati sabji. This recipe requires only a few ingredients and gets prepared in very less oil, yet its so delicious and flavoursome.

Ingredients Serving: 3

  1. Cooked rice 3 cups
  2. 1 large lemon
  3. 1 tablespoon Chana dal
  4. 1 teaspoon urad dal
  5. 2-3 tablespoons groundnuts
  6. 1 teaspoon mustard seeds
  7. 2-3 teaspoon oil
  8. 2 teaspoon salt, or as per taste
  9. 1 teaspoon sugar
  10. 5-6 curry leaves
  11. 2 tablespoons chopped coriander leaves
  12. Pinch of asafoetida
  13. 1/4 teaspoon turmeric

Instructions

  1. Soak chana dal in lukewarm water
  2. Juice 1 lemon and strain it.
  3. Keep you rice cooked and ready, leftover rice can be used.
  4. Heat oil in a large kadhai and add mustard seeds and let them splutter fully.
  5. Add groundnuts to oil and roast.
  6. Add urad dal
  7. drain water from chana dal and add to this and roast everything.
  8. once done add curry leaves and green chillies to this and sauté.
  9. now add asafoetida, turmeric, salt and sugar and mix.
  10. Switch off flame, and immediately add lemon juice, the mixture will bubble.
  11. keep this mixture covered for some time. I kept it for 5-7 minutes. In the mean time I chopped coriander leaves.
  12. now add rice and coriander leaves and mix everything.
  13. Your tasty lemon rice is ready to be served or packed for lunch box. I served with Kabul chana masala.
