Baked rice pudding is a dry and solid variation of the normal wet and creamy pudding. This baked variation is also known as old fashioned rice pudding. This one is a childhood favourite of mine. I used to love taking this in the Lunchbox and my son also love it.

clean and wash the rice properly.
Place uncooked rice in a pan, add salt and water. Bring to a boil.
Reduce heat and simmer for 25 to 30 minutes or till rice is well cooked.
Now add milk.
Stir gently and cook for another 2 to 3 minutes on low flame and turn off the heat.
Separate egg yolks from egg whites.
In a bowl combine beaten egg yolks, sugar, vanilla extract and ghee. Mix well.
The mixture is ready.
Now pour the mixture gradually into the rice pudding and stir continuously.
Pour the hot pudding into a baking dish.
Now mix raisins, chopped cashews, chopped almonds, chopped pistachios and cinnamon powder with the pudding.
Place baking dish in a large baking tray and pour water into the tray.
Preheat the oven at 180 degree Celsius and bake the pudding for 50 minutes.
The baked rice pudding is ready.
Cool slightly and cut into squares to serve.
