ABOUT Caramelised Rice Pudding RECIPE

Delicious pudding with yummy caramel flavour served with caramelised crunchy cashew nuts.

Ingredients Serving: 2

  1. Cooked rice 2-3 cups
  2. Sugar 1 cup
  3. Milk 1/2 litre
  4. Cashew nuts 1 tablespoon
  5. Saffron strands few

Instructions

  1. Take cooked rice and milk and mix properly.
  2. Cook rice and milk mixture till half in quantity.
  3. In a separate pan, take sugar and melt it till it becomes golden in colour and switch off the gas.
  4. Add some cashew nuts to caramel and quickly remove it.
  5. Allow caramelised cashew nuts to cool down completely. They will hard in few minutes.
  6. Carefully pour this ready caramel over rice and milk mixture.
  7. Mix well and allow it to cool.
  8. Garnish with caramelized cashew nuts and saffron strands.
  9. Keep it in refrigerator.
  10. Serve chilled.
