ABOUT Pulihora / Tamarind Rice RECIPE

In Andhra Pradesh, pulihora is commonly referred to as poor man’s festival food. Pulihora is a combination of salty, hot, sour and spicy tastes (all at a time). It is considered to be a good stimulant for a dull appetite. Pulihora can be a good picnic and travel diet.

Ingredients Serving: 4

  1. 2 cups cooked rice
  2. 1/2 cup Tamarind pulp
  3. 5-6 tbsp. Peanuts, roasted
  4. Salt to taste
  5. FOR TEMPERING/SEASONING/TADKA/POPPU:
  6. 1 tsp mustard seeds
  7. 1 tbsp Cumin/Jeera seeds
  8. 1 tbsp channa dal
  9. 2 Dry red Chillis
  10. 2-3 Green chillis, deseeded and slit length-wise
  11. 1/4 tsp turmeric powder
  12. 6-9 Curry leaves
  13. oil

Instructions

  1. Add oil to a cooking vessel and when the oil gets heated up add mustard seeds, cumin seeds, dry red chillis, green chillis, curry leaves and fry till the tempering starts to change color.
  2. Now add tamarind pulp, salt and turmeric powder. Cook till the raw smell of tamarind disappears.
  3. Now add cooked rice and roasted peanuts. Stir till all the ingredients gets mixed up.
  4. Cook on a low flame for few (5-6) minutes covering with a lid.
  5. Allow it to cool down for 2-3 hours to get flavours absorbed by the rice.
