ABOUT Mango and tamarind pulihora(puliyogare) RECIPE

Pulihora, often prepared during festivals and is offered as naivedyam to the gods. Cooked rice is seasoned with tamarind paste and other basic ingredients like curry leaves, peanuts, chilies and turmeric.

Ingredients Serving: 3

  1. 2 cups rice
  2. Turmeric powder 2tbs
  3. Oil 1/4thcup
  4. salt as needed
  5. Fistfull of tamarind or 5tbs tamarind pulp
  6. Mustard seeds 2tbs
  7. Urag Dal,chana Dal,cashew nuts 2tbs each
  8. Dry mirchi 8
  9. Green chilies slit 8
  10. Ginger pieces 2tbs
  11. Curry leaves handfull
  12. Hing as needed
  13. Mango zest 2tbs
  14. 1 lemon Juice

Instructions

  1. Cook rice by adding turmeric powder and 2tbs oil
  2. Cook rice without making it mushy. Spread the rice on a wide plate .Set aside to cool completely.
  3. Add oil to a pan and heat it. Fry dal and cashews till golden
  4. Add oil to a pan and heat it. add curry leaves, ginger, green chilies and red chilies. Fry everything well.
  5. Mix the temparing in the rice
  6. wash and soak tamarind in hot water and make a thick paste by squeezing.warm up so that water have evaporate. Filter to remove stones and debris. Set this aside.mix in the tempered rice...
  7. Finally add lemon juice and mango pulp..
  8. 1/2 of the medium size mango grated and mixed with the rice. Sprinkle salt as much as needed.
  9. Garnish with mango or dry chillies.
