ABOUT Puliyogare RECIPE

This type of rice , also kown as tamarind rice is a very famous brunch or a lunch recipe. This has the tangyness of the tamarind along with spices and makes up a wholesome meal on its own.

Ingredients Serving: 3

  1. For Rice :
  2. Rice - 1 cup
  3. Water- 2 Cups
  4. Salt to taste
  5. Turmeric powder- 1/2tsp
  6. oil- 1 & 1/2tbsp
  7. For tempering:
  8. Oil- 2tbsp
  9. Chana dal- 1tbsp
  10. Urad dal- 1tbsp
  11. Peanuts- 1 ½ handful
  12. Hing [Asafoetida]- 1tsp
  13. Mustard seeds- 1tsp
  14. Cumin seeds- 1tsp
  15. Red chilli- 2
  16. Sesame seed- 1 1/2tbsp
  17. Salt to taste
  18. Tamarind- a lemon size ball
  19. Sugar- 1 & 1/2tbsp
  20. Turmeric powder - 1tsp
  21. Green chili- 2
  22. Curry leaves- 2

Instructions

  1. Soak tamarind in a microwave safe bowl and microwave it for a min. then leave it for 10 mins. Then mash with hand and discard the seeds and keep the pulp aside
  2. Dry roast the sesame seeds and make a fine powder and keep aside
  3. Clean rice properly under running water. In a pressure cooker add rice, water, salt, haldi and oil and close the lid. Cook the rice upto 2 whistles (1 in high and 1 in low). Let it cool down completely. Run a fork in the rice to make loose and separate. Spread the rice in a plate so that it will be cool down a bit and don’t stick to each other
  4. In a wide pan add oil and let it heat. Then add red chilli to it. Then add chana dal and urad dal and fry for some seconds. Then add mustard and cumin seeds and fry again.
  5. Then add hing and curry leaves to it and fry again. Now add tamarind pulp, salt, sugar or jaggery and haldi and fry up to the raw smell of the tamarind goes off. After that add sesame seed powder and mix properly and switch off the gas. Add cooked rice to it and mix properly. Pulihora is ready to serve.
