Ingredients Serving: 5

  1. Brown bread slices 5
  2. Soya nuggets 15
  3. Salt as required
  4. White pepper powder as required
  5. Thyme 3/4 teaspoon
  6. Garlic Mayonnaise 3 tablespoons
  7. Large eggs 2
  8. Spring onions finely chopped 3 tablespoons
  9. Butter 2 tablespoons

Instructions

  1. Soak soya nuggets in hot water for 5 minutes till they turn soft and double in size .
  2. Squeeze and drain the soya nuggets .
  3. Chop the squeezed out soya into fine minced pieces .
  4. In a bowl , take chopped soya nuggets .
  5. Add 3 tablespoons garlic mayonnaise.
  6. Add salt as preferred.
  7. Add white pepper powder as preferred.
  8. Add 2 tablespoons of chopped spring onions .
  9. Mix all together .
  10. The filling is ready .
  11. Now take the brown bread slices .
  12. Trim off the corners from all the sides .
  13. Press the bread with a pinning roll / palms to flat without breaking the bread slices .
  14. Repeat the same on the remaining bread slices .
  15. In a bowl , beat and pour 2 large eggs .
  16. Add 1 teaspoon thyme .
  17. Whisk eggs gently . Don’t whisk to frothy consistency . Keep it aside .
  18. Take a tablespoon of soya filling and place it on the pressed bread slice .
  19. Roll the bread slice .
  20. Seal the end with little egg mixture so that roll doesn’t rip off .
  21. Likewise , fill the remaining pressed bread slices with soya filling .
  22. Roll them and seal the ends with egg mixture .
  23. Heat a tablespoon butter in a grilled pan .
  24. Dip each bread rolls into the egg mixture . Coat the rolls well with egg mixture .
  25. Place the rolls on the hot butter .
  26. Grill them all the sides in low to medium heat .
  27. Drizzle butter on the rolls .
  28. Finally garnish with chopped spring onions .
  29. Serve hot .
