For Filling
Spinach _200 gm
Mushroom_200 gm
Chicken _200 gm(boneless) cooked
Onion_1(small)minced
Garlic-2 cloves ( minced)
Butter_1 table spoon
Chicken broth_1/4 cup
Cream cheese_120 gm
For Sauce
Butter_2 table spoon
All purpose flour_2 table spoon
Milk_2 cup
Chicken broth_1/2 cup
Salt to taste
Mozarella cheese-60 gm
For making tortilla
All purpose flour_1 and half cup
Salt_1/2 teaspoon
Baking powder_1/2 teaspoon
Warm water_1/2 cup
Oil _2 tablespoon
Other ingredients
Olive oil _for brushing the pan
Chilly flakes_1 tsp
Mozarella cheese-200gm
Instructions
For the filling
Melt the butter in a pan over medium heat and saute onions, garlic and mushroom until soft and liquid has evaporated.
And the chicken broth and cook for 2 more minutes.
Add the spinach and saute it well.
Stir in the cream cheese until melted.
Add salt and stir in the chicken.
For the sauce
Heat a pan add butter and add all purpose flour and salt and saute it well.
Add milk little by little and add chicken broth and cook until sauce start to thickens . Finally add mozarella cheese and switch of the flame and mix well.
For making tortilla
Combine all ingredients until it form a dough.
Make balls out of it.
Roll out the balls.
Cook the tortilla on both sides in a heated pan.
Preheat oven to 180 degree and grease a baking dish with olive oil.
Divide filling evenly among 6 tortillas,fill and roll and place them seam side down in the prepared pan.
Pour sauce over enchilladas,topped with mozarella cheese ,chilly flakes and bake 20 minutes or bubbly.
