Ingredients Serving: 6

  1. For Filling
  2. Spinach _200 gm
  3. Mushroom_200 gm
  4. Chicken _200 gm(boneless) cooked
  5. Onion_1(small)minced
  6. Garlic-2 cloves ( minced)
  7. Butter_1 table spoon
  8. Chicken broth_1/4 cup
  9. Cream cheese_120 gm
  10. For Sauce
  11. Butter_2 table spoon
  12. All purpose flour_2 table spoon
  13. Milk_2 cup
  14. Chicken broth_1/2 cup
  15. Salt to taste
  16. Mozarella cheese-60 gm
  17. For making tortilla
  18. All purpose flour_1 and half cup
  19. Salt_1/2 teaspoon
  20. Baking powder_1/2 teaspoon
  21. Warm water_1/2 cup
  22. Oil _2 tablespoon
  23. Other ingredients
  24. Olive oil _for brushing the pan
  25. Chilly flakes_1 tsp
  26. Mozarella cheese-200gm

Instructions

  1. For the filling
  2. Melt the butter in a pan over medium heat and saute onions, garlic and mushroom until soft and liquid has evaporated.
  3. And the chicken broth and cook for 2 more minutes.
  4. Add the spinach and saute it well.
  5. Stir in the cream cheese until melted.
  6. Add salt and stir in the chicken.
  7. For the sauce
  8. Heat a pan add butter and add all purpose flour and salt and saute it well.
  9. Add milk little by little and add chicken broth and cook until sauce start to thickens . Finally add mozarella cheese and switch of the flame and mix well.
  10. For making tortilla
  11. Combine all ingredients until it form a dough.
  12. Make balls out of it.
  13. Roll out the balls.
  14. Cook the tortilla on both sides in a heated pan.
  15. Preheat oven to 180 degree and grease a baking dish with olive oil.
  16. Divide filling evenly among 6 tortillas,fill and roll and place them seam side down in the prepared pan.
  17. Pour sauce over enchilladas,topped with mozarella cheese ,chilly flakes and bake 20 minutes or bubbly.
