ABOUT Sarvapindi-Telangana delicacy RECIPE

Sarvapindi also known as Akki roti in some areas, it is a Telangana dish ( a state of India ) a famous snack or brunch item.. It is traditionally made in two varieties either using Green chilli paste or red chilli powder... They taste great either ways but might differ in appearance... The authentic way of making this involved the copper bowl n coal stove..but these days those are hard to find..and moreover they were teeth breaking and jaw hurting hard to eat..but after so many trials and errors initially ,Ii finally could make one that are soft and chewable... These can be stored for couple of days depending on the weather.. This dish is also preferred during travel n long journeys !!

Ingredients Serving: 4

  1. 2 cups rice flour
  2. 1 large onion paste ( makes the sarvapindi soft, chewable n flavorful, its optional though onion haters can avoid )
  3. 1 medium onion chopped
  4. 2 tbsp roasted sesame seeds
  5. 2 to 3 tbsp Moong dal 
  6. Few curry leaves chopped
  7. Few scallions or green or spring onions chopped..
  8. 2 tbsp Red chilli powder or to taste
  9. Salt to taste
  10. Warm to hot water as needed
  11. Oil as needed

Instructions

  1. Wash and soak the moong dal for atleast 20 mins or until doubled in size.Next in a wide bowl add the rice flour, roasted sesame seeds, soaked dal, red chilli powder, salt, chopped onion, chopped spring onion n curry leaves n mix well.Now add the onion paste and mix well.
  2. Start adding water little by little and knead a soft sticky dough. Once done keep it covered for 10 mins.
  3. Next take a flat skillet or tawa and add 2 to 3 tbsp of oil , spread it evenly, no need to heat. Next take some dough and start patting in circular motion forming a roti.
  4. Later make holes on it here and there as shown, these help in roasting to perfection  getting slightly crispier. Now place this over the heat / flame n cook on medium.
  5. Cook for few mins until you see the top is dry without any raw flour..like this Now flip this over n cook for few more mins. Be careful as oil might spill.
  6. Later remove this on to a paper towel to remove excess oil. The oil remaining on the skillet can be used for cooking the next one.
  7. The traditional goodness is already to be served.. It is authentically eaten either with ghee or curd... Perfect tea time accompainment...so filling n flavorful !!! Make n enjoy !!! We loved it hope you will too !!!
