ABOUT Ginger fish RECIPE

A delightful, crispy, spicy fish with the strong flavour of ginger, a perfect starter for any occasion.

Ingredients Serving: 4

  1. Marination :
  2. Boneless fish - 200 gm
  3. Ginger paste - 1 tsp
  4. Garlic paste - 1/2 tsp
  5. Pepper powder - 1 tsp
  6. Egg - 1
  7. Cornflour - 3 tbsp
  8. Tempering :
  9. Onion paste - 4 tbsp
  10. Ginger paste - 1 tbsp
  11. Garlic paste - 1/2 tbsp
  12. Tomato sauce - 3 tbsp
  13. Soy sauce - 1 tsp
  14. Red chilly paste - 2 tsp
  15. Ajinamoto - 1/2 tsp
  16. Salt
  17. Refined oil
  18. Garnishing :
  19. Ginger juliennes
  20. Chopped coriander leaves

Instructions

  1. MARINATION : BONELESS FISH,GINGER GARLIC PASTE, EGG, PEPPER POWDER, SALT, CORNFLOUR
  2. TAKE 200 GM FISH IN A BOWL, ADD 1 EGG, 1 TSP GINGER PASTE, 1/2 TSP GARLIC PASTE.
  3. ADD 1 TSP PEPPER POWDER AND SALT. MIX WELL .
  4. ADD 3 TBSP OF CORNFLOUR TO THE MIX AND MARINATE FOR 2 HRS.
  5. NOW HEAT AMPLE AMOUNT OF OIL IN A WOK, DEEP FRY THE MARINATED FISH PIECES.
  6. FRY UNTIL GOLDEN BROWN IN COLOUR AND KEEP ASIDE.
  7. TEMPERING : ONION PASTE - 4 TBSP, GINGER PASTE - 1 TBSP, GARLIC PASTE - 1/2 TBSP, SOY SAUCE - 1 TSP, TOMATO SAUCE - 2 TBSP, RED CHILLY PASTE - 2 TSP, AJINAMOTO - 1/2 TSP, SALT
  8. HEAT OIL IN ANOTHER PAN, ADD THE ONION PASTE AND SAUTE FOR FEW SECONDS.
  9. NOW ADD THE GINGER AND GARLIC PASTE. SAUTE FOR FEW MINUTES UNTIL GOLDEN BROWN.
  10. NOW ADD THE TOMATO SAUCE, SOY SAUCE AND RED CHILLY PASTE.
  11. STIR FOR FEW SECONDS AND THEN ADD SALT, AJINAMOTO. MIX.
  12. ONCE THE MASALA IS COOKED, ADD THE FRIED FISH PIECES. STIR WELL AND GARNISH WITH GINGER JULIENES AND CHOPPED CORIANDER.
