ABOUT ARBI MALAI KOFTA GRAVY RECIPE

Arbi koftas are made by adding mashed Arbi, coarsely ground nuts,raisins and green chillies. This koftas are very tasty, crispy and nutty in flavor. It's spongy and fluffy unlike potato koftas.Theses koftas are added to rich malai gravy. It goes well with all types of rotis and flavoured rice.

Ingredients Serving: 4

  1. Arbi 1/4 kg
  2. Ginger garlic paste 1 teaspoon
  3. Curry powder 1/2 teaspoon
  4. Green chillies 4
  5. Mixed nuts (pistachios, almond, walnut, hazelnut and cashew) 1/4cup
  6. Raisins chopped 8
  7. Bread crumbs 2 tablespoon
  8. Cornflour 1teaspoon
  9. Coriander leaves 1 fistful
  10. Salt to taste
  11. Oil for frying
  12. For malai gravy
  13. Onion 2
  14. Tomato 3
  15. Cashew 6
  16. Cloves 3
  17. Cinnamon 1/2 an inch
  18. Cardamom 3(all the above to be boiled and blended)
  19. For tempering
  20. Onion 1/2 number
  21. Cloves 3
  22. Cinnamon 1/ an inch
  23. Ginger garlic paste 1 teaspoon
  24. Oil 3 teaspoon *
  25. Salt to taste
  26. Fresh cream 1/2 cup
  27. Coriander leaves for garnishing

Instructions

  1. INGREDIENTS FOR ARBI KOFTA.
  2. BOIL ARBI AND MASH WELL.ADD GINGER GARLIC PASTE, CURRY POWDER AND SALT TO TASTE.
  3. ADD CORNFLOUR, MIXED DRY FRUIT AND BREAD CRUMBS TO MASHED ARBI.
  4. ADD CHOPPED GREEN CHILLIES AND CORIANDER LEAVES TO IT.
  5. MIX WELL.
  6. ARBI KOFTA BATTER IS READY TO FRY.
  7. APPLY OIL IN HAND AND MAKE SMALL ROUND BALLS.
  8. ROUND ARBI KOFTA BATTER BALL IS READY TO FRY.
  9. HEAT OIL IN A WOK AND GENTLY DROP THE BALL IN OIL.
  10. FRY KOFTA ON A MEDIUM FLAME.
  11. WAIT TILL IT'S GOLDEN BROWN. TRANSFER IT ON TO TISSUE PAPER TO ABSORB OIL.
  12. FRIED ARBI KOFTAS ARE READY.
  13. BOIL WATER IN A WOK. ADD ONIONS, TOMATOES, CASHEW,CARDAMOM, CHILLIES, CLOVES AND CINNAMON.
  14. LET IT BOIL FOR 5 MINUTES.
  15. CLOSE THE LID. IT HELPS TO COOK FAST.
  16. IT'S DONE. LET IT COOL BEFORE GRINDING INTO PASTE.
  17. HEAT OIL IN A WOK.
  18. ADD CLOVES AND CINNAMON.
  19. WAIT TILL IT SPLUTTER. ADD LITTLE CHOPPED ONION, GINGER AND GARLIC PASTE.
  20. LET IT SAUTE FOR A MINUTE.
  21. ADD BOILED BLENDED ONION TOMATO AND SPICES MIXTURE TO IT.
  22. DRY MASALAS FOR ARBI MALAI KOFTA.
  23. ADD CHILLI AND CURRY POWDER.
  24. ADD GARAM MASALA POWDER, SUGAR AND SALT TO TASTE.
  25. LET IT BOIL FOR FEW MINUTES.
  26. WHEN IT'S DONE OIL WILL START TO SEPARATE. ADD CRUSHED KASOORI METHI AND FRESH CREAM.
  27. MIX WELL.
  28. MALAI GRAVY IS READY
  29. ADD FRIED ARBI KOFTAS TO THE GRAVY.
  30. GARNISH IT WITH CORIANDER LEAVES AND FRESH CREAM.
  31. ARBI MALAI KOFTA IS READY TO SERVE.
