Ingredients Serving: 4

  1. For tempering
  2. oil
  3. Mustard 1/2 tsp
  4. jeera 1/2 tsp
  5. Split urad dal 1 tsp
  6. Channa dal 1 tsp
  7. Hing 1/2 tsp
  8. Cashews
  9. For Carrot rice
  10. 500 gms grated carrot
  11. Grated coconut 2 tbsp
  12. 2 cups cooked basmati rice
  13. Green chillies 2- 3
  14. curry leaves
  15. Salt
  16. For Mint Rice
  17. 2 cups cooked basmati rice
  18. Salt
  19. Fry in oil and grind
  20. 1 cup mint
  21. Coriander leaves 1/4 cup optional
  22. Green chillies 2-3
  23. Grated coconut 2 tbsp

Instructions

  1. ADD OIL IN KADAI. ADD MUSTARD
  2. WHEN MUSTARD CRACKS, ADD 1/2 TSP JEERA, SPLIT URAD DAL AND CASHEWS
  3. ADD 1 TSP CHANNA DAL AND 1/2 TSP HING. SAUTE TILL THE DAL COLOR CHANGES TO GOLDEN BROWN
  4. ADD 2 SLIT GREEN CHILLIES AND CURRY LEAVES
  5. SAUTE 500 GMS GRATED CARROT
  6. ADD SALT AS PER YOUR TASTE AND 2 TBSP GRATED COCONUT
  7. ADD 2 CUPS OF COOKED BASMATI RICE. MIX GENTLY
  8. MIX WELL AND SET ASIDE
  9. IN ANOTHER PAN, ADD OIL. SAUTE 1 CUP MINT LEAVES, 2 TBSP GRATED COCONUT AND 2 SLIT GREEN CHILLIES. GRIND TO PUREE
  10. ADD OIL IN KADAI. ADD MUSTARD
  11. ADD 1/2 TSP JEERA, 1 TSP SPLIT URAD DAL AND CASHEWS
  12. ADD 1 TSP CHANNA DAL AND 1/2 TSP HING. SAUTE TILL THE DAL COLOR CHANGES TO GOLDEN BROWN
  13. ADD GROUND MINT PUREE. SAUTE TILL YOU GET GOOD AROMA
  14. ADD 2 CUPS OF COOKED BASMATI RICE
  15. ADD SALT AS PER YOUR TASTE. MIX
  16. MINT RICE READY TO SERVE
  17. ADD LAYERS OF CARROT RICE, PLAIN RICE AND MINT RICE. SERVE WITH VADAMS
