ABOUT RUSSIAN CHICKEN KEBAB WITH A CHEESY TWIST RECIPE

The basic and foremost chicken starter recipe that ibhad learned after my marriage was RUSSIAN KEBAB. Chicken kebabs made using veggies and basic seasoning fried crisp by coating with vermicelli. I have added a twist of cheese to it as kids love cheese in anything & with everything

Ingredients Serving: 8

  1. 250 grams chicken, boiled and shredded
  2. 2 medium potatoes, boiled & mashed
  3. 1/2 cup green peas, blanched & mashed
  4. 1 medium carrot grated
  5. 1 small capsicum, finely chopped
  6. 2 green chillies
  7. 1 inch ginger
  8. 6-8 garlic cloves
  9. 1 teaspoon salt
  10. 1 tablespoon lime juice
  11. 1 tablespoon maida, roasted
  12. 1/4 cup processed cheese, grated
  13. 2 Eggs
  14. 1 cup vermicelli
  15. Oil for shallow frying

Instructions

  1. HEAT 1 TSP OIL IN A PAN
  2. ADD GINGER GARLIC CHILLI PASTE & SAUTE FOR 30 SECONDS
  3. ADD CARROTS & CAPSICUM. SAUTE UNTIL THEY ARE SOFT
  4. ADD MASHED BLANCHED GREEN PEAS , POTATOES & SHREDDED CHICKEN
  5. MIX WELL
  6. ADD THE ROASTED MAIDA & SALT
  7. TURN OFF THE FLAME & ADD LIME JUICE. MIX WELL
  8. ONCE THE MIXTURE COOLS, ADD CHEESE & CHOPPED CORIANDER
  9. GREASE PALMS WITH OIL AND MAKE DESIRED SIZED TIKKIS
  10. THIS PROPORTION WOULD MAKE 8 BURGER PATTIE SIZE KEBAB
  11. BREAK THE EGGS & ADD A PINCH OF SALT TO IT. WHISK WELL.
  12. DIP THE KEBAB FIRST INTO THE EGG MIX AND THEN COAT WITH VERMICELLI
  13. SIMILARLY COAT ALL THE TIKKIS
  14. HEAT 4-5 TBSP OIL IN A PAN & FRY THE TIKKIS ON A MEDIUM FLAME
  15. FLIP SIDE FOR EVEN BROWNING OF BOTH SIDES
  16. WHEN DONE, REMOVE ON ABSORBENT PAPER
