Fusion recipe at its best when gajar halwa is filled inside pastry dough and made as hand pie. Desi halwa meets videshi pie to create a yummy dessert. And one more reason to eat gajar halwa this season.

Ingredients Serving: 2

  1. For making of gajar halwa as filling :
  2. Red carrots 1/2 kg
  3. Milk 1 liter
  4. Milk powder 1 tbsp
  5. Sugar 1/2 cup or more or less
  6. Dry fruits chopped handful
  7. Ghee 2 tsp
  8. For making pie :
  9. All purposeFlour/Maida 100 gms
  10. powdered sugar 50 gms or less
  11. 1/4 teaspoon cardamom powder
  12. 1 teaspoon Ghee/Clarified butter
  13. A pinch of salt
  14. Water to knead the dough

Instructions

  1. PEEL, WASH AND GRATE 1/2 KG RED CARROTS
  2. IN A NON STICK PAN PUT 1 LITER MILK
  3. BOIL THE MILK AND ADD GRATED CARROTS. COOK ON SLOW FLAME TILL MILK IS ABSORBED INTO CARROTS AND IT STARTS TO LEAVE THE SIDES.
  4. ADD 2 TSP GHEE AND 1/2 CUP OF SUGAR AND MIX WELL
  5. MIX NICELY TILL SUGAR IN IT DISSOLVES AND WATER FROM IT DRIES UP
  6. ADD 1 TBSP OF MILK POWDER IN IT
  7. TAKE OUT HALWA IN A BOEL AND ADD HANDFUL OF CHOPPED DRY FRUITS OF YOUR CHOICE
  8. FOR MAKING PASTRY DOUGH FOR THE PIE, IN A BOWL PUT 100 GMS OF MAIDA. ADD 1 TEASPOON GHEE/CLARIFIED BUTTER AND 50 GMS POWDERED SUGAR
  9. ADD1/4 TEASPOON CARDAMOM POWDER AND MIX WELL
  10. ADD A PINCH OF SALT AND WATER TO KNEAD THE DOUGH
  11. TRANSFER THE DOUGH IN A BOWL AND COVER IT AND KEEP IN THE FRIDGE FOR 30 MINUTES
  12. TAKE SMALL PORTIONS OF THE PASTRY DOUGH, ROLL THEM LIKE FLAT BREADS AND USING A COOKIE CUTTER/ PIZZA CUTTER CUT THEM IN DESIRED SHAPES. 
  13. WITH THESE MEASUREMENTS 8 RECTANGULAR PIECES CAN BE MADE. FILL 4 PIECES OF PASTRY DOUGH WITH GAJAR HALWA
  14. AND COVER THEM WITH ANOTHER 4 PASTRY DOUGH PIECES. SEAL THE EDGES USING A FORK.
  15. SEAL FROM ALL 4 SIDES
  16. NOW PIERCE IN THE CENTER TOO SO THAT STEAM CAN ESCAPE EASILY
  17. PREHEAT YOUR OVEN AT 180 DEGREES C FOR 10 MINUTES. LINE A BAKING TRAY WITH BUTTER PAPER. PLACE THE PIES AND BRUSH THE TOP OF THE PIES WITH MILK OR GHEE.
  18. BAKE THEM AT 170 DEGREES C FOR 10 TO 12 MINUTES OR TILL THE TIME THE PIES ARE BROWN ON THE SIDES AND BACK
  19. BAKED PERFECT GOLDEN BROWN ON BOTH SIDES
