ABOUT Gajar ka Halwa RECIPE

Out of the many Indian winter staples, the one that tops the list for most people is classic gajar ka halwa. You may be a fan of exotic cuisines but some things can never lose their charm and this undoubtedly is one of them. Gajar ka halwa or gajrela is an Indian sweet dish made by cooking grated carrots with ghee, khoya, sugar and nuts. It is probably the most popular and certainly the most famous of Indian sweet dishes. It originates from the northern parts of India.

Ingredients Serving: 4

  1. Gajar or carrots (4piece)
  2. Ghee 4 tablespoons
  3. Sugar 1/2cup
  4. Milk 1cup
  5. Khoya or mawa 150gm
  6. Cardamom powder 1 teaspoon
  7. Almonds
  8. PISTACHIO
  9. Kaju badam
  10. RAISINS

Instructions

  1. Grate the carrot using a grating machine. Eventually grate the mawa or khoya.
  2. In a kadai add ghee and when the fumes arises add the grated carrots. After stirring for few minutes cover it with a lid.
  3. Cook for 10mins then add milk and powered sugar. Cook for more 5mins. Add cinnamon powder
  4. Eventually toss the kaju badam in a pan with some ghee to have a crunchy texture. Soak the raisins in a bowl of water for few minutes.
  5. Add the dry fruits and cook for a while.
  6. Garnish with some grated dry fruits and mawa.
