Ingredients Serving: 6

  1. 200 gms of Japanese sweet rice/any short grain rice cooked until soft
  2. 150 gms sugar
  3. 200 gms thick coconut milk/creme
  4. 1 tbspn salt
  5. Water as needed to cook rice
  6. Mixed Fruits : 1/2 ripe mango
  7. 6 strawberries
  8. 1 slice pineapple (10 gms)
  9. 4 blueberries
  10. 1 kiwi fruit
  11. 4 pieces dried cranberries
  12. 1/2 tbspn toasted black sesame seeds

Instructions

  1. Ingridents
  2. Mash the cooked 200 gms short grain rice with a spoon and keep aside
  3. Combine 200 ml coconut creme, 100 gms sugar,1 Tbspn salt and mix till sugar dissolves in a pan
  4. After done pour the liquid to the rice and let cool
  5. Chop half a mango in strips, 4 strawberries,kiwis lengthwise & in circles. Chop other fruits small
  6. For rolling sushis place a cling wrap. Place the bamboo mat and another cling wrap on the mat
  7. Arrange half the rice in rectangular form and arrange the chopped strawberries and kiwis cut length
  8. After you arrange the fruits on the rice, it will look like this
  9. Roll the bamboo sheet tightly once along with the cling wrap and press for a minute
  10. Place the sliced mango pieces on half the folded rice bar
  11. Fold the bamboo sheet once again tightly so that the mango slices stick on to the rice
  12. With the cling wrap on cut into one inch cylindrical pieces using a wet knife
  13. Make egg shaped balls & a few with toasted sesame with the remaining rice and garnish with fruits
