First time ever i tried my hand on icing on this cake, it was my husband's birthday and i decided to make his favourite fresh fruit cake, very happy with outcome

For sponge
1 cup maida
1/2 cup milk powder
1/2 cup powderd sugar
1/2 cup curd
1/2 cup Milk
2 tbsp Oil
Fruit assence
1/2 tsp Lemon Juice
1/4 tsp Salt
1 tsp Baking powder
1/2 tsp baking soda
Sugar syrup
For icing
200 ml whipping cream
Fresh seasonal fruits of your choice (here i used kiwi, banana., apple, papaya, pomegranate )
For decoration
Kiwi glaze
Colourful sugar balls
Instructions
Start with grease a square shape tin, dust with flour, remove extra flour Nd keeo it aside
Preheat the oven at 180 degree for about 10 minutes
In a mixing bowl sieve together maida, milk powder,. Powderd sugar, salt, baking soda and baking powder
Now in another bowl add all the wet ingredients and mix well together
Add wet ingredients into dry ingredients in batches and mix it with cut and fold method or with help of a whisker
Add 10 drops of fruit assence and 1/2 tsp lemon juice into it
Transfer this mixture into greased tin, and tap the tin for 8-10 times
Bake it in a preheated oven at 180 degree for 40 minutes with both the rods on
After 40 minutes check it with toothpick ,if it comes out clean then its done
Otherwise bake for another 5 minutes , this is our ready base
Cool the cake on room temperature , meantime whip the cream with help of beater for at least 15 minutes to get stiff peaks
Cut the cake into equal 2 parts with help of a sharp knife
Now place the one part of cake on a turn table, moist the cake with sugar syrup
Cover with whipped cream, spread chopped fresh fruits on it, then again some whipped cream, and place the second half part of cake on it and moist again with sugar syrup
Now cover the cake (crumb coat) with whipped cream,
Put into refrigerator for 10 minutes, and then again cover with whipped cream
Smooth it with helo of scraper, make lines with comb on the edges, drizzle some kiwi glaze on edges
Fill some cream in piping bag, make flowers on edges with help of star nozzle
Decorate with fresh fruits and sugar balls
Our fresh fruit cake is ready to rock the party
