Ingredients Serving: 6

  1. Refined flour 70 gms
  2. Powdered sugar 50 gms
  3. Baking powder 1 tsp
  4. Eggs 5
  5. Vanilla essense 1/2 tsp
  6. Whipped cream 500 gms
  7. Pineapple slices 4-5
  8. Kiwi 1
  9. Cherries 100 gms
  10. Mangoes (if available) 2-3 slices
  11. Sugar syrup 2 tbsp

Instructions

  1. Sift the flour along with baking powder 2-3 times.
  2. Beat the eggs, sugar and vanilla essence until light and fluffy.
  3. Fold in the sifted flour using the cut and fold method.
  4. Transfer to a baking mould and bake in a preheated oven at 160 degree centigrade for 20 minutes.
  5. Once the cake is ready let it cool completely and then cut it into half, horizontally.
  6. Moisten both the halves with sugar syrup. (if using canned cherries you can use it's syrup).
  7. Chop half the fruits and keep aside the remaining for decoration.
  8. Now put half of the whipped cream on one half of the cake and spread evenly.
  9. Spread the chopped fruits on the cream and cover with the other half of the cake.
  10. Cover the entire cake with the remaining cream evenly. Decorate as per your wish.
  11. Keep in the refrigerator for 10-15 minutes for setting.
