Ingredients Serving: 4

  1. Long grain rice / Basmati rice 2 and 1/2 cups
  2. Mutton 500 g
  3. Onion (chopped) 2
  4. Tomatoes 3
  5. Ginger (finely chopped) 1 tbsp
  6. Garlic (finely chopped) 1 tbsp
  7. Green chilies (cut lengthwise) 2
  8. Chopped Coriander leaves 2 tbsp
  9. Lemon zest 1/4 tsp
  10. Cardamom 2
  11. Cinnamon 3 small pieces
  12. Cloves 5
  13. Bay leaf 1
  14. Cumin seeds 1 tsp
  15. Crushed fennel 1 tsp
  16. Crushed pepper 1 tsp
  17. Coriander powder 1 and 1/2 tsp
  18. Ginger powder 1/2 tsp
  19. Turmeric powder 1/2 tsp
  20. Red chili powder 1/2 tsp
  21. Salt as required
  22. Vegetable oil 4 tbsp
  23. Ghee/Butter 2 tbsp
  24. Water 5 Cups

Instructions

  1. IN 4 TBSP HOT OIL, ADD 1 BAY LEAF, 3 CINNAMON STICKS , 4 GREEN CARDAMOMS & 3 CLOVES, SPLUTTER, ADD 2 ONIONS & FRY TILL TRANSLUCENT
  2. ADD 1 TBSP GINGER
  3. ADD 1 TBSP GARLIC
  4. ADD 2 GREEN CHILIES
  5. ADD 2 TBSP GARAM MASALA / MEAT MASALA, SAUTE
  6. ADD 1/2 TSP RED CHILLI
  7. ADD 2 TBSP CORIANDER
  8. ADD 1/2 TSP LEMON ZEST
  9. ADD THE PUREE OF 2 BLANCHED & PEELED TOMATOES
  10. ADD 1 BOILED TOMATO
  11. MIX WELL, SAUTE FOR 2 MINS
  12. ADD 500 GMS MUTTON PIECES
  13. ADD SALT TO TASTE, SAUTE FOR 5 MINS
  14. ADD 3 CUPS WATER TO THE MUTTON
  15. PRESSURE COOK FOR 15 MINS
  16. IN 2 TBSP HOT GHEE, ADD COOKED & DRAINED MUTTON PIECES ( RESERVING THE STOCK )
  17. FRY TILL BROWN, KEEP ASIDE
  18. SIMMER 2.5 CUPS SOAKED RICE IN THE RESERVED MUTTON STOCK + 2 CUPS WATER
  19. ADD SALT TO TASTE
  20. PRESSURE COOK FOR 1 WHISTLE
  21. ADD THE FRIED MUTTON PIECES
  22. GARNISH WITH FRIED ALMONDS, SERVE HOT
