Ingredients Serving: 10

  1. Carrot finely grated 2 cups
  2. Rice flour 1 cup
  3. Tapioca flour 3/4 cup
  4. Baking powder 2 teaspoons
  5. Baking soda 1 + 1/4 teaspoon
  6. Cinnamon powder 1 tablespoon
  7. Orange essence 1.5 teaspoon
  8. Dates Mawa 1/2 cup ( 10 large chopped dates and 2 tablespoons dry coconut powder is added while preparing mawa)
  9. Olive Oil 1/4 cup
  10. Whole milk at room temperature 1.5 cups
  11. Honey 1 cup
  12. Golden raisins fistful
  13. Pistachios 1 fistful finely sliced
  14. Chocolate sprinklers 2 teaspoons or as preferred .

Instructions

  1. Firstly , Sift 3/4 cup Tapioca flour .
  2. Secondly, add 1 cup rice flour to sieve.
  3. Add 2 teaspoons baking powder.
  4. Add 1 +1/4 teaspoon baking soda .
  5. Add 1 tablespoon cinnamon powder . Sift the dry ingredients and keep them aside .
  6. For wet ingredients : Add 1/4 cup olive oil in a bowl .
  7. Add 1.5 cups whole milk at room temperature.
  8. Add 1 cup honey .
  9. Add 1.5 teaspoon orange essence .
  10. Mix the ingredients gently until combined well. Don’t over mix.
  11. Start adding the sifted dry ingredients gradually to wet ingredients while mixing other hand.
  12. Add 2 cups finely grated carrot .
  13. Add 1/2 cup dates mawa (Add finely chopped 10 large dates 2 tbs dry coconut while preparing mawa ).
  14. Add a fistful of golden raisins .
  15. Mix all to a lump free , smooth cake batter . Batter shouldn’t be runny nor scooping tight .
  16. Line a loaf tin with a parchment sheet.Pour the batter in . Sprinkle sliced pistachios,choco
  17. sprinklers .Bake in a preheated cooker for 40 minutes/until no moisture left.Preheat time 10mins. Before baking , don’t forget to tap the tin down in a hard flat surface .
  18. Gluten free Carrot Dates Mawa Sponge Loaf is ready. Slice and serve . Relish .
