Gluten free , highly nutritive , delicious Indian Momos / modaks . These Momos are a healthy tea time snack , breakfast / brunch , party appetizers . Goodness of Bajra flour along with 3 types of cheese makes these Momos absolutely yummy. Serve these cheesy Momos / modaks with a spicy sauce .

Ingredients Serving: 5

  1. For the Dough :
  2. Bajra / Pearl millet flour 1 cup
  3. Water 1/2 cup
  4. Salt 2 pinches or as preferred
  5. Ghee for greasing the steamer plate ,hands and plate 2 tablespoons
  6. Oil for Deep frying
  7. For the Filling :
  8. Butter 1.5 tablespoons
  9. Garlic finely chopped 2 tablespoons
  10. Onion 1 medium sized Finely chopped
  11. Green onions 1/4 cup finely chopped
  12. Cottage cheese grated 1 cup
  13. Ricotto cheese grated 2 tablespoons
  14. Mozzarella shredded cheese as required
  15. Soya sauce 1.5 teaspoon
  16. Hot sauce 2 teaspoons
  17. For the Momos sauce :
  18. Tomatoes ripe big sized 2
  19. Red dried chillies 7 -9
  20. Garlic Cloves 5
  21. Salt as required
  22. Black pepper powder 2 pinches
  23. Sesame Oil 4 tablespoons

Instructions

  1. Heat a pan . Melt 1.5 tablespoons butter .
  2. Add 2 tablespoons finely chopped garlic . Sauté until aroma released .
  3. Add 1 medium onion finely chopped .
  4. Sauté till translucent.
  5. Add 1/4 cup finely chopped green onions .
  6. Add 1 cup finely grated cottage cheese .
  7. Add 1.5 teaspoon soy sauce .
  8. Add hot sauce 2 teaspoons.
  9. Use grated ricotta cheese 2 tablespoons or as preferred.
  10. Cheesy filling is ready .
  11. Heat 1/2 cup water in a pan . Add required salt .
  12. Add 1 cup flour while water boils well .
  13. Mix immediately and see the flour is moist . Don’t pour too much water .
  14. Transfer the moist dough to a bowl .
  15. Keep mixing the hot dough until warm .
  16. The flour is moist and par cooked . By now , the flour is warm to handle .
  17. Knead into a smooth dough . Sprinkle water if really necessary .
  18. Divide the dough into equal medium sized balls .
  19. Grease your hands with ghee . Spread a ball on a greased plate into thin sheet as shown . Stuff
  20. the cheesy filling . Sprinkle shredded mozzarella cheese . Shape them into modaks.
  21. I steamed few modaks in a idli steamer for 10 minutes .
  22. Deep fried few modaks in hot oil .
  23. Fry in medium heat by flipping sides for even frying .
  24. Take out the fried modaks . Drain excess oil .
  25. Let’s prepare a sauce for these Indian Momos . Boil 2 big ripe tomatoes and 7 dried red chillies
  26. till Tomato’s skin shrinks . Remove the skin . Cool the mixture . Add 5 garlic cloves , salt ,
  27. pepper powder and blend to a smooth sauce. Add 4 tablespoons sesame oil.
  28. Cheesy Bajra Modaks ( Indian Momos ) in fried and steamed versions are ready . Serve hot
  29. with freshly prepared momos sauce . These are steamed modaks .
  30. Look at the fried crispy modak.
  31. Enjoy these healthy snack .
