  1. For aamras sevaiya
  2. Sevaiya 100 gms
  3. Mango 1 kg
  4. For curd rice
  5. Rice 1 cup
  6. Curd 2 cups
  7. Salt
  8. Rai 1 tsp
  9. Jeera 1 tsp
  10. Curry leaves few
  11. Dry red chillies 2
  12. Instant cabbage stem pickle
  13. Cabbage stem finely chopped 1 cup
  14. Methi sambhar 2 tsp
  15. Hing 1/2 tsp
  16. Red chilli powder 1 tsp
  17. Turmeric 1 tsp
  18. Salt
  19. Oil 1 tsp
  20. Lemon juice 1 tsp
  21. For koftas
  22. Cabbage cut 4 cups
  23. Green chilli paste 1 tsp
  24. Gg paste 1 tsp
  25. Coriander 1 tsp
  26. Dhania powder 1 tsp
  27. Red chilli powder 1 tsp
  28. Turmeric 1 tsp
  29. Salt
  30. Oil 1 tsp
  31. Gram flour 2 cups
  32. For gravy if curry
  33. Oil 2 tsp
  34. Rai 1 tsp
  35. Jeera 1 tsp
  36. Onion puree 1 cup
  37. 2 tomato puree 2 cups
  38. Green chilli paste 1 tsp
  39. Gg paste 1 tsp
  40. Corainder finely chopped 2 tsp
  41. Dhania powder 1 tsp
  42. Red chilli powder 2 tsp
  43. Turmeric 1 tsp
  44. Salt
  45. Water 3 cups
  46. Oil to fry koftas..

Instructions

  1. LETS START WITH SEVAIYA..THIS ARE HOME MADE SEVAIYA...BOIL WATER..ADD SEVAIYA
  2. BOIL FOR 5 MIN
  3. SEE IF PROPERLY COOKED...OFF THE GAS
  4. DRAIN EXCESS WATER ..
  5. AGAIN ADD COLD WATER SO THAT STICKINESS DECREASES
  6. DRAIN ALL THE WATER AND KEEP ASIDE
  7. NOW SQUEEZE MANGOES AND COLLECT THE PULP IN A BOWL..
  8. MIX THE SEVAIYA IN AAM RAS
  9. ADD REQUIRED SUGAR AND MIX WELL..
  10. AAM RAS SEVAIYA IS READY..U CAN REFRIGERATE AND HAVE..
  11. LETS START WITH CABBAGE STEM PICKLE..CUT THICK PART OF CABBAGE INTO FINE PIECES,ADD TURMERIC AND SALT
  12. MIX WELL.KEEP IT ASIDE FOR 30 MIN..
  13. ADD METHI SAMBHAR POWDER,RED CHILLI POWDER
  14. ADD HING AND SALT
  15. ADD LITTLE OIL AND MIX WELL..
  16. INSTANT PICKLE IS READY TO SERVE..
  17. COOK RICE AND LET IT COOL
  18. FOR TADKA..HEAT OIL..ADD RAI JEERA,RED CHILLI,CURRY LEAVES
  19. ADD CHURNED CURD,TADKA IN COOLED COOKED RICE..READY TO SERVE..
  20. LETS START WITH CABBAGE KOFTAS..TAKE BOWL OF CABBAGE..ADD GREEN CHILLI PASTE,GINGER GARLIC PASTE
  21. ADD CORAINDER,RED CHILLI POWDEE
  22. ADD TURMERIC,DHANIA POWDER
  23. ADD SALT
  24. ADD 2 TSP OIL
  25. ADD CHOPPED CORIANDER
  26. ADD 2 TBSP GRAM FLOUR AND MIX WELL
  27. FORM BALL FOR KOFTAS..
  28. HEAT OIL IN A PAN,ADD RAI..JEERA.. ONION PASTE
  29. SAUTE FOR FEW MIN AND ADD TOMATO PUREE
  30. ADD GREEN CHILLI PASTE,GINGER GARLIC PASTE AND SAUTE TILL IT RELEASES OIL
  31. ADD DHANIA POWDER,RED CHILLI POWDER AND HALDI
  32. ADD CORIANDER AND MIX WELL..COOK FOR FEW MIN
  33. NOW ADD 2 CUPS OF WATER AND LET IT BOIL
  34. ADD ROUND KOFTAS ONCE BOILING STARTS..
  35. COOK FOR TEN MIN TILL KOFTAS BECOME SOFT
  36. MAKE FLAT MUTIAS OF SAME MIXTURE AND FRY
  37. FRY ON MEDIUM FLAME TILL BROWN
  38. SERVE THE LUNCH WITH ROUND SOFT CHAPATIS...
