ABOUT Kootu Curry RECIPE

No Kerala sadya is complete without the delicious Kootu Curry. This is a mandatory curry for all festivals too

Ingredients Serving: 4

  1. black chana half cup
  2. white pumpkin / Ash gourd one cup diced
  3. raw plantain half cup diced
  4. 1 cup yam diced
  5. 3/4 teaspoon turmeric
  6. 2 teaspoon red chilli powder
  7. 2 tbsp jaggery
  8. salt to taste
  9. For grinding
  10. grated coconut three fourth cup
  11. one teaspoon jeera
  12. For Seasoning
  13. 1 tbsp coconut oil
  14. three fourth Cup grated coconut
  15. half teaspoon mustard seeds
  16. 2-3 dry Red Chillies
  17. two sprig curry leaves
  18. 1 tbsp coconut oil to drizzle

Instructions

  1. SOAK BLACK CHANA OVERNIGHT
  2. CLEAN AND DRAIN EXCESS WATER
  3. PRESSURE COOK CHANA WITH SUFFICIENT WATER AND SALT UNTIL DONE. KEEP IT ASIDE
  4. COOK VEGETABLES WITH LITTLE WATER UNTIL 95 PERCENTAGE DONE
  5. GRIND COCONUT AND CUMIN SEEDS WITH LITTLE WATER TO FORM SMOOTH PASTE
  6. ADD GROUND COCONUT PASTE, SPICE POWDERS AND SALT TP VEGGIES
  7. ADD JAGGERY AND STIR UNTIL JAGGERY IS DISSOLVED
  8. ADD CHANA WITH WATER. MIX WELL
  9. COOK UNTIL RAW TASTE OF COCONUT GOES AWAY
  10. IN SEPERATE PAN, SPLUTTER MUSTARD SEEDS IN OIL
  11. ADD COCONUT, DRY RED CHILLI AND CURRY LEAVES. SAUTE UNTIL GOLDEN BROWN
  12. ADD SEASONING TO CURRY AND MIX WELL
  13. DRIZZLE OIL, COVER AND LET IT STAND FOR 20 MINUTES BEFORE SERVING
  14. SERVE WARM WITH RICE
